Brown sugar is produced analogously to white candy by slowly crystallizing a sugar solution. The small sugar crystals combine with increasing crystals. In contrast to white varieties, however, the sugar solution is pre-heated in brown candy and then cooled again. By heating it comes to the brown color and the typical caramel-like taste.
